I'm not really dealing with Erestor's back story in these snippets, but the fact that the sons of Feanor held hope seems evident by their deeds in the early days of their arrival in Middle Earth. I think as time went on and their quest became untenable, hope began to die.
Everyone deserves a choice, and unless one is living in an active war zone, warriors are not usually a full-time job (except in today's modern times of strife *sigh*). Since Gondolin was a closed settlement, I feel that almost everyone would have held more than a single job, and that everyone would have been trained to wield a sword and/or bow out of necessity. Just my opinion, though, and my storyline.
